iFixit has told Gizmodo that it is possible that the Bluetooth chip has been hidden somewhere in the internals of the iPod touch: “We’re looking into it. It’s hard to say because they can disguise bluetooth antenna on the PCB and the chip could be integrated into something else. I’ll see what I can dig up.”
Apparently Gizmodo (and most other people) assumed that iFixits lack of report on Bluetooth implied that there was no Bluetooth, however it seems they were mistaken. “We’re talking more to iFixit on the matter. There was a faulty consensus that their lack of report on Bluetooth implied that there was no Bluetooth. That was our mistake.”
According to Engadget, Broadcom, Marvell, and CSR all offer single-chip solutions with combined WiFi and Bluetooth radios, and they have heard from a decent source that the internals of the iPod touch are very similar to that of the iphone and that there is a Bluetooth chip in there — it’s just not activated.

Yea, that would be pretty sweat - but not a deal breaker. Who cares if it isnt built in so much they dont buy it??!! Bluetooth adapters have been CONFIRMED working with the 16gb models. Ill post a link as soon as i can finf=d it again : ) - but it will work.

“TOTALY off topic, but I have an iTouch, got it yesterday, and the bluetooth adapter I have on my 5.5G video 80GB DOES work, so I CAN stream music from my iPod touch by plugging this accessory into the bottom port, my sony Xplod Car stereo that has bluetooth & works beautifully. The bluetooth adapter brand is a Scoche Bluetooth adapter for iPod. It is the black one that plugs directly into the iPod’s bottom port where the usb cable goes. so no more tethering through aux input with a wire.
Just thought I’d post this for everyone considering a iPod Touch. All I could find was a ebay link. there are others available from Jabra and other companies, but this is confirmed working with the new iPod touch 16GB. I went to UTC Mall in San Diego and they had a few in stock early.

ipod.toucher i totally agree, bluetooth is not going to be a deciding factor, but defiantly it is a bonus. About the bluetooth adapter, thats pretty cool - do you reckon you would be able to detect neighboring ipod touch(s) who had the bluetooth adapter installed?
